I've never used a Fuji digital camera so I'm not able to recommend against it... but I can highly recommend the Canon 5d Mark II. Love the narrow depth of field you achieved and all with natural lighting. I have a Fuji S1 Pro that is starting to show its' age which I was going to replace with an S5 - although the Canon 5D Mk II looks like it could be a contender as well (used to have a Canon A1 many years ago that was great).
